Pulses have been consumed for at least 10,000 years and are among the most extensively used foods in the world. They provide protein and fiber, and are a great source of vitamins and minerals, such as iron, zinc and magnesium.
Only legumes harvested for DRY grain are classified as pulses.
*** Legume species when used as vegetables (e.g. green peas, green beans), for oil extraction (e.g. soybean, groundnut) and for sowing purposes (e.g. clover, alfalfa) are NOT considered pulses.
Pulses are an important source of protein for the largely vegetarian population of India.
India is the largest PRODUCER (25% of global production), CONSUMER (27% of world consumption) and IMPORTER (14%) of pulses in the world.
Originally cultivated in the Mediterranean and the Middle East, CHICKPEAS, also known as garbanzo beans, have spread their culinary influence to areas all over the world. They are featured prominently in Greek, Indian, Italian, Middle Eastern, Portuguese and Spanish cuisine.
Protein sourced from 'grain legumes' costs 1/5 AS MUCH as protein from milk. 'Grain legumes' (beans, pulses and oilseeds) are protein rich and affordable foods. In addition, the amino acid balance of grain legume protein complements that of cereals when eaten together, greatly improving the protein quality of the combined food.
Pulses have a LOW FAT content and contain zero cholesterol. The Glycemic Index (an indicator of the effect on blood sugar) is also low in pulses, and they are a significant source of dietary fiber.
Since they DO NOT CONTAIN GLUTEN, they are an ideal food for celiac patients.
COWPEAS are rich in potassium with a good amount of calcium, magnesium and phosphorus. This pulse tones the spleen, stomach and pancreas.
Pulses are good for the environment because plants need nitrogen to grow and reproduce, and many varieties of pulses can biologically fix nitrogen from the air. When pulses plants decompose, the fixed nitrogen is released and it can be used by companion and subsequent crops. Additionally, using pulses in intercropping, pulse-cereal rotations and as cover crops can help increase organic matter and microbial biomass and activity (e.g. bacteria, fungi) in the soil.
